This recipe was handed down to me by my mother in law, it is hands down, one of my absolute favourites. Super easy to make and disappears as quickly as an hour after I’ve baked it! Great with a cup of tea or coffee, perfect comfort food and next to no effort in getting it ready! Perfect family treat.
So what you’ll need:
175g Softened Unsalted Butter (or Pure Soy spread or Sunflower spread for Dairy Free Option)
200g Demerara Sugar
220g Plain Flour
Pinch of salt
Beat together the softened butter, salt and 150g of the demerara sugar until blended.
Sift the flour into the mixture and fold with a spoon or a ladle.*
Roll out the mixture into two 6 inch (15cm) sausages on a floured surface.
Sprinkle the rest of the demerara sugar on to the surface and roll each of the sausages over this to form a nice crunchy exterior.
Roll the sausages in individual cling films (or aluminium foil) and refrigerate for an hour for the butter to slightly solidify.
Pre-heat the oven to 160®C (150®C for fan ovens)
Grease two baking trays and line them with baking sheet. Grease on top of the baking sheet too!
Cut each sausage evenly into 16 pieces using a sharp knife and place them on the baking sheets.
Place in the centre of the warm oven and bake for 20 minutes or until golden brown at the edges.
Cool on a wire rack.
