I don’t know about anyone else, but I am always in a hurry! I conveniently forget about dinner until its too late and then I am scrounging my brain for ideas to get dinner out in a short space of time!
During one such occasion, this particular dish was born. An easy to make, one pot rice dish, contains everything from carbs to protein to fat all in one and it takes less than 30 minutes to get from raw ingredients to the plate… it goes pretty quick too. The children love it! To be fair so do the grown ups.
Don’t worry if you don’t have these particular vegetables, whatever you have in the fridge or freezer pretty much goes and it always tastes great. So if you are in a “hurry” to get food on the table or plain lazy like I am most days then get involved and let me know how it goes.
So what’ll you need?
1 cup rice
2-3 cups of whatever veg you have, I’ve used – carrots, potatoes, yams (sweet potatoes), green beans and peas
1 chilli, slit in the middle
1 tsp cumin seeds
1 tsp cayenne pepper
1 tbsp Ghee
1 veggie stock cube/stockpot
1 pint water
Salt and pepper to taste

Sauté mode. Heat the ghee.
Add the green chilli and the cumin seeds followed by the rice. Coat well with ghee.
Add all the mixed veg, the ground spices, the stock pot and the water.
Mix everything really well. Pop the lid on, cancel sauté mode, set to 5 minutes high pressure on manual mode. Set the valve to sealing.
Once the pressure is released naturally, mix well and serve with raita.
