Avocado Wrap

Hey folks, I have recently been on a health kick, what with diabetes and PCOS keeping me busy and off the delectable “fried stuff”! Well as usual, that has just given me more determination to create wonderful recipes that aren’t just healthy but taste bloody amazing as well. 

So, this wrap, it includes avocado, which has many a health benefit, including suppressing your appetite and overall calorific intake over the rest of the day. Bring on the good fat that will keep you fuller for longer whilst fighting diabetes all the way. It is also known to help with relieving pain and discomfort from arthritic conditions. And to top it all off, it doesn’t just keep bad breath away, it also acts as an aphrodisiac! Wowzers is correct!! 

So, what’ll you need? 

1 Avocado (ripe and ready)

2 flour tortillas

1 tub of red pepper humous (or you can choose your favourite kind)

1 chilli/jalapeno pepper, chopped – optional

1 cup of grated cheese (Mexican chilli, mature, red Leicester or any other kind), you can also mix and match!

½ tsp Worcestershire sauce

Salt and pepper for taste

Olive oil to brush 

Method: 

Pre-heat the oven to 180°C(fan assisted or 200°C for conventional). Whilst it is pre-heating, spray a baking tray with 1 cal olive oil spray and line with a parchment.

Roughly chop and mash the avocado, pour the Worcestershire sauce, chopped chilli and salt and pepper and mix well.

Lay a tortilla wrap on a flat surface, about an inch from one of the sides, smear the humous generously – you can use as much as you like or as little, I used about one centimetre.

Now layer with some of the avocado mash.

Finally, generously layer with some of the grated cheese.

Using the edge of the tortilla close to the ingredients, tightly wrap it and place it on the baking tray.

Brush with olive oil and place in the centre of the oven for 12-14 minutes.

Rest for around 4-5 minutes and serve.

Tip – some of the gooey avocado goodness might ooze out in the process, scoop it right back in with the back of a spoon.
